Carnitas
for tacos or burritos

4-5 lb pork butt
2 tsp salt
1/2 tsp oregano
1 tsp cumin
swatch of cilatro
2 onions chopped
2 carrots maybe cut in 1/3's

Place pork in deep pot, just barely cover w/water, adding everything else.

Bring to slow boil, cover simmer low for 2-1/2 hrs.

Lift meat from stock place in roasting pan. Save broth for Mex rice.

Bake 350 for 45 min. till meat is well browned. Drain off fat.

Bring meat to table. Peel off for tacos. Usually just served with soft corn tortillas, lime sqeezes and cilantro. I also serve w/chopped onion, cheese and tomatos or salsa. Really good if you happen to have some colleslaw.

The meat is sooo tasty. Don't forget a lime squeeze.
