Squash Squares
Easy and goes over well at potlucks

1 cup Bisquick®
4 eggs, well beaten
1/2 cup canola oil
1/2 cup parmesan cheese
1/2 cup well chopped onion
2 Tbs parsley
1/4 to 1/2 tsp seasoned salt
1/8 tsp pepper
2 med zucchini squash, grated w/skin

Combine all ingredients except squash.

Beat well. Stir in squash. Pour into greased baking pan 13"x9".

Bake at 350 for 35 minutes. Let stand 10 minutes. Cut into squares.

Leftovers in fridge.

Also good w/browned sausage stirred in before baking.
