Salmon Cakes with Mushroom Sauce

Mix together:

2 cups flaked cooked salmon
/2 tsp salt (optional)
1/2 cup cooked rice or crumbled crackers
1/8 tsp paprika
2 beaten eggs
dash of lemon

Form mix into cakes, and fry.

Serve with mushroom sauce

Mushroom Sauce

Heat fresh mushrooms until cooked or canned mushrooms until heated.

In another pan brown 2 tbs flour.

Add 2 tbs butter for a rue.

Stir in 1 cup milk until thick.

Add heated mushrooms.

Stir in 2-3 tbs fresh lemon juice just before serving. This must be done carefully to avoid separation and curdling. Garnish with celery seed.
