Delta Supper with Sausage and Cornbread Topping

DELTA SUPPER
From Taste of Home Homemaker Schools, Spring 1997
Preheat oven to 400 degrees.
6-8 servings

1 lb Smoked Sausage, cut into l inch pieces
1 large Onion, cut into slices
2 large Green peppers, cut into strips
3 Tbs Cooking oil, divided
1 can (14-1/2 oz) Del Monte Fresh Cut Diced Tomatoes
2 cans (16 oz) each Black-eyed peas, drained
1 cup Martha White Self Rising Corn Meal Mix
1/4 tsp Spice Islands Cayenne pepper
2/3 cup Milk
1 Beaten egg

In a large skillet over medium-high heat, cook sausage, onion and green pepper in 1 tbs oil until vegetables are tender.

Stir in tomatoes and peas; reduce heat and simmer for 5 minutes.

In a small bowl, combine corn meal mix, red pepper milk, egg and remaining oil; Pour over sausage mixture.

Pour into a greased 13" x 9" x 2" baking dish. Bake for 25 -30 minutes or until golden brown.
