Peanut Chicken Casserole

(This is a well received crock pot casserole for potlucks. Even kids will try it.)

Chicken -  1/3 lb per person
garlic
Cooked white rice -  1/2 cup per person
ginger
1/2 cup soy sauce salt & pepper
1 can raw Spanish peanuts
2 large fresh chopped tomatoes or 1 can stewed tomatoes
Vegetables -  equal to double the volume of the chicken (leftovers are wonderful)
Suggested: chopped onions, green peppers, mushrooms, carrots

De-bone and skin chicken.

Layer chicken in a large un-greased baking dish and sprinkle with 1/4 cup soy sauce.

DO NOT salt and pepper yet.

Bake 10 minutes in microwave or 40 minutes at 325 degrees.

In your main cooking pot, simmer vegetables of choice if using fresh raw rather than left-overs. Season with spices.

Stir in peanuts, chicken, rice and tomatoes.

Sprinkle about 1/4 cup more soy sauce over mix so rice looks brownish. Simmer a few minutes for flavors to blend.
