Southern Biscuit Muffins
From "The Muffin Cookbook"® 1990
Preheat over to 400º 12 muffins

2-1/2 cups all purpose flour
1/4 cup cold butter or margarine
l/4 cup sugar
1 cup cold milk
1-1/2 tbs baking powder

Grease muffins cups. Muffins brown better when baked with paper liners.

In a large bowl, combine flour, sugar and baking powder.

Cut in butter until mixture resembles coarse crumbs.

Stir in milk just until flour mixture is moistened.

Spoon into muffin cups. Bake 20 minutes until golden.

Remove from pan and cool on rack.

Taste just like baking powder biscuits.

Serve with jelly, jam or honey.
