Mexi-Corn Bread
8" square pan
400 degrees
30-40 minutes

Combine dry ingredients in a bowl and mix well:
1 cup corn meal
1 cup flour
1 Tbs baking powder
1 tsp salt

Beat together
1 egg
1 cup milk


Stir in 1 cup cream style or mashed corn

Saute 1/4 cup chopped onion until tender.

Stir onion, and egg mix into dry mix.

Stir in just until mixed:
2 tbs chopped pimento
2 tbs chopped olive
1/2 cup shredded Cheddar cheese

Pour into a well buttered 8" square pan.

Bake until toothpick inserted in center comes out clean.
