Perfect Prime Rib
Line an old roasting pan w/foil
Make a rub of:
Rub roast w/mixture. Let sit on counter for 2 hours to room temp (very important) Make mixture of 3 lbs. Kosher salt and 1 cup water Seal the roast with this mixture on top and sides. Put roast in 500 degree oven (scary but works) Roast for 5 minutes per lb. No more, no less. Then turn oven off. DO NOT OPEN OVEN DOOR FOR 2 HOURS. Remove roast, let sit for 5 minutes. Remove salt. It lifts off just like a helmet. You will have the most perfect prime rib ever! |
