Bourbon Sweet Potatoes/Yams

2 - 29oz cans sweet potatoes or yams, drained and slightly mashed
3/4 cup packed brown sugar
1/2 cup melted butter
1/2 tsp vanilla extract
1/2 cup bourbon, a little more is good too
1 cup miniature marshmallows


Combine all ingredients except marshmallows, mix well

Spoon mixture into lightly greased 2 qt casserole

Cover and refrigerate overnight

Have a drink or two of bourbon

Remove from fridge and let stand for 30 minutes

Bake uncovered at 350 for 25 minutes

Remove from oven and top w/marshmallows

Bake another 7-8 minutes or till mallows are a nice golden brown

Marshmallows are of course optional if you don't like them
