NOT-JUST-FOR-CATHOLICS LENTEN STUFFED FISH

Stuffed flounder/sole/whitefish (ah, heck, just get 4-8 mild fish fillets, frozen or fresh.)
1/4 C chopped onion
1/4 C butter
1 3 oz. can mushrooms (shudder) drained, reserve liquid
1 can crabmeat
1/2 C course cracker crumbs (saltine or Ritz)
2 T snipped parsley
Salt
Pepper

Cook onion till soft, stir in mushrooms (if you must). Add flaked crab, cracker crumbs, parsley, dash salt and pepper. Divide and spread mixture over fillets and roll up. Place seam side down in baking dish.

SAUCE
3 T butter
3 T flour
Milk or Condensed Milk or Cream
1/3 C dry white whine ("But I hate mushrooms" - okay, make that 'wine')
4 oz shredded Swiss cheese
Paprika
Salt

Melt butter and add flour and a dash of salt. Add enough milk to the mushroom liquid to make 1 1/2 C. (or use just milk, condensed mild, or cream and forget the damn mushroom liquid). Add wine.

Cook and stir over low heat until sauce thickens and bubbles. Pour over stuffed fillets.

Bake in 400 degree oven for 25 minutes. Sprinkle with cheese and a dash of paprika and return to oven. Bake 10 minutes longer or till browned slightly.
