Sweet Pea's Cole Slaw
This was originally
developed for a restaurant, so it makes enough for a crowd -- and both types of
slaw-people (creamy vs. vinegary) generally like it .
Chop up:
1 whole green cabbage (take out hard core and darkest outer leaves)
1/4 red cabbage
2 - 3 carrots
1 stalk of celery
2 - 3 radishes
Mix well with:
2 Tablespoons vinegar
1/4 Cup mayonnaise (or less) (Duke's is best, but not available everywhere)
~ 3/4 teaspoon dried basil
~ 3/4 teaspoon dried oregano
~ 1/2 teaspoon black pepper
~ 1/4 teaspoon garlic/pepper blend
~ 2 Tablespoons seasoning salt (a little less)
stir it all up together -- it's best if it sits in the fridge for a few hours,
and it will keep for three or four days.
