Tex-Mex Sushi!
(Note: I tend to make things up as I go along so alter to taste and have fun!)
(Note2: I don't use amounts. I'll estimate for a dinner for two!)

Ingredients:
Rice (one cup, uncooked white)
Onions (~half an onion)
mushrooms (a fistful! say, 6)
Red Bell pepper (one)
Green or Yellow Bell Peppers (three)
Mozzarella cheese (can use muenster, or provolone)
Soy sauce, Tiger Sauce, spices and anything else lying about the fridge! (You can add chicken or shrimp or some other dead ani-mule if you like and it's great that way too!)

PREPWORK:
Chop off the tops and bottoms of your green bell peppers and slice crosswise into inch thick rings. They will serve as the "seaweed wrapper" for the ingredients, so pick nice big peppers and cut them to hold the muck you're cooking! (This is why I say use three, you're shooting for good inch thick rings and you can dice up the scraps from
this process and toss them in the sauté!

Slice your Mozz. into strips, or shred it. Set it aside.

INSTRUCCIONES:
Cook your rice while you sauté your diced up onions and
mushrooms and red peppers in the soy sauce. (can add animals at this point too) toss in some salts and seasons to tastes. or don't use nuthin and let the natural veggie come through!

When rice is done and veggies are ready, dump your rice in with your veggies. If you like a spicy dish pour some gloobs of Tiger sauce or whatever spicy sauce you like over the whole mess. Stir (duh!)

Kick your oven on to ~250ish as you carefully fill your pepper halves with the rice and veggie mix. Pack it in tightly (hey, it's gonna be hot, so be careful!)

Place your Pepper Sushis on a cookie sheet.

Sprinkle or place cheese strips on top of the peppers.

You only put this into the oven to melt the cheese and "sear" the bottoms a touch. At this point I usually set out the other dishes and keep a close eye on things so as not to burn nuthin!. Set a timer for 3 minutes just to keep you on your toes! I have left this in a touch too long and browned is okay, black is NOT! To rescue this you can easily pull off the burnt cheese and sprinkle more on top. Don't put back in oven!

This can be a light meal in itself or a nice compliment to a tortilla soup or similar soup.

{You could easily do this with smaller, hotter or sweeter peppers! Very hot little jalapeno sushitos could be good too!}
