Roast Garlic Dip, easy
this was an experiment in a pinch and turned out great!

1 whole bulb roasted garlic -- Barely slice off tips of each clove, remove as much of paper skin as you can keeping bulb intact.

Place in a pocket of heavy foil, drizzle with plenty of olive oil. Seal foil and bake.

I use my toaster oven, 425 for 35 minutes. Make more than one at a time to have on hand for other dishes. Fresh roasted garlic is wonderful!

Let bulb cool a bit. Squeeze up from bottom, cloves will pop right out.

Stir together:

as much of the garlic as you want, I used a whole bulb
8 oz softened cream cheese
1/4 to 1/2 cup sour cream
1 T parsley
1 tsp parmesean cheese
1 tsp rice wine vinegar or lemon juice should work fine
1/4 tsp celery seed
1/4 tsp dill

Chill and serve with crackers or veggies. Even better the next day giving flavors a chance to meld.
